Recipe: (Anita's) Runamok Candied Bacon

I'm still in NY.  Dad is doing much better (thank God). 





I want to share a recipe I made for Dave and I when we took Amtrak to the Fancy Food Show in NYC.  Nothing like a nice bottle of wine and charcuterie with candied bacon. 


(Anita's) Runamok Candied Bacon
6 sliced bacon
1/4 c. + 1 Tbl. packed light brown sugar
1/4 c. + plus more for drizzling, 
     Runamok Bourbon Barrel-Aged Maple Syrup
black pepper, to taste

Preheat oven to 275 degrees.

Line a baking sheet with aluminum foil.  Place a wire rack on top of that.  Set aside.

Place bacon in a medium bowl.  Add 1/4 cup Maple Syrup and toss to coat bacon.  **Lay bacon strips on baking rack.  Sprinkle each slice of bacon with black pepper. Crumble brown sugar on each bacon strip.  Drizzle Maple Syrup on each bacon strip.

Bake for 1-1/4 hours.  Remove from oven.  Let cool.  Cut each bacon slice in half.  Serve.

**This is how I place the bacon on my wire rack to cook.

FANCY FOOD SHOW


This has been the BEST Food Show for me yet.  I sampled so many new products that are now on TFM's store shelves.  I also sampled some that will be coming in, in the next couple of months.  A few of the new brands are sending sample product back with me for this coming weekend!  I cannot wait to share with you.  I will update my blog later in the week.  Hope to see you this weekend!!!


I was so excited to meet Chef Elizabeth Faulkner.  She's amazing.

Chris Muir from Wild Hibiscus Flower Co. (with Chef Elizabeth Faulkner) won Specialty Food Association's Front Burner Food Service Competition. 
I was so glad to be there and watch him win.

Every year I get my signed Bob's Red Mill Cookbook and picture taken with Bob Moore.

When will I return ...





I'm off to the Fancy Food show in NYC.  Dave is coming with me.







I look forward to this EVERY year.  

     - Hoping to find delicious new clients.  

     - Touch base with my current and past clients.

     - Learn about new products at TFM and find recipes or swag for my 
       customers.

     - Get away from the house (that's the terrible mom/grandma in me).

     - A relaxing train ride, complete with wine and charcutterie! 
       (My favorite part.)

It will be a blast searching for new and exciting brands/products/recipes!


I'm hoping to work June 29th and 30th.  However, Dad is in the hospital and not sure when he'll be home. (As of last night, 1 week in ICU (Major surgery and he's 92 so they have to monitor him) and then 2 weeks in rehab.)  That's when I'll go back to NY to help them.  Thank God my sister was in from Maine when this happened.  She's helping Mom now.  I'm waiting to see Dad's progress before I make plans to head up to NY.

Recipes: Instant Pot Southern Potatoes and Green Beans - Over Cream Cheese: Chile Crunch


This was our setup for last weekend.  Meat cutting on the floor with my food and wine.  Did you purchase a beef tenderloin?  I did.  Prepared it for dinner the other night and it was melt in your mouth delicious!

Two recipes from my sampling were favorites.  Here we go ...

Instant Pot Southern Potatoes and Green Beans
(adapted from spicysouthernkitchen.com)

6 slices bacon, cut into bite size pieces
1 c. diced onion
1¼ c. chicken broth
1 lb. green beans, cut in half
24 oz. 1-Bite Potatoes
1 tsp. Crazy Jane Mixed-Up Salt
½ tsp. garlic powder
½ tsp. black pepper
¼ tsp. crushed red pepper flakes
2 Tbl. butter

Turn Instant Pot on SAUTE/NORMAL*.  When light indicates HOT, add bacon and cook until desired doneness (medium to crisp).  Add onion and cook until translucent.

Turn Instant Pot off (CANCEL).  Add chicken broth, scrapping up browned bits on the bottom.   Add Crazy Jane, garlic powder, black pepper and red pepper flakes.  Stir.

Add potatoes then green beans on top.  Put lid on pot and make sure pressure valve is closed.  
1. Set Instant Pot to PRESSURE – LOW/NORMAL* and make sure WARM is off. 
2. Cook for 4 minutes. 
3. Do natural release for 10 minutes. 
4. Open pressure valve to release any remaining steam/pressure.
5. When red pin drops, remove the lid.
Stir in butter and serve.

Note#2 : At the end of cooking, stir in TFM’s Rotisserie Chicken (pull from the bone).  It’s FANTASTIC with the sauce in this dish and makes a complete meal.

SAUTE-NORMAL

PRESSURE - LOW/NORMAL

Not much to say ... Easy.  Delicious.  Can be a side dish or complete meal.  Customers enjoyed.  Sold a lot of potatoes and green beans.

Chile Crunch is new into the store. I didn't know what to expect. But, along with customers ... pleasantly surprised.  Delicious!  


No measuring.  Just layer.

1 block of cream cheese
1 jar TFM Apricot Jam
1 jar Chile Crunch

Place cream cheese on serving dish.  Top with jam.  Drizzle with Chile Crunch (use both the oil and chile).  Serve with your favorite crackers.

So easy and flavorful.  A blend of creamy, sweet, and spicy.  You can use goat cheese in place of cream cheese, giving you a added tangy note.

Wine and Food Tasting - June 15th

Last weekend I was blown out of the water ... Rain for days.  I wasn't going to share new wines and food when the store would most probably be slow.  Plus my hours were cut (heck, everyone's are being cut), so I didn't have time to prepare what I wanted to sample.  I'll keep things simple (for my hours) and if no rain, I'll pour some nice wines.

TFM has their cutting on the floor event (Premium Choice and USDA Prime Beef Tenderloin).   GREAT for Father's Day and stocking up.  I have the perfect side dish for it and I'm going to use my Instant Pot.


Saturday, June 15th

Recipes: Slow Cooked Meatballs (Maple Bacon Onion Jam)


Only one recipe for this past weekend and I did use my Instant Pot.  This time I used the SLOW COOKER and loved it.  When it comes to the KEEP WARM setting, the meatballs were the perfect temperature for the whole 4 hour sampling.  Here is the EASY recipe:


It doesn't get any easier that this.  1 lb. meat to 1 jar savory jam.


This is a customer favorite.  Not just because how easy it is to prepare, but there's no measuring and no prep involved.  Open and mix. 

I used Bove's meatballs.  They are delicious and do not taste like frozen meatballs.

This recipe works with any (1 pound) of meat - sausage, kielbasi, chicken, pork.

        YES!  I am working this weekend.



So many new items in the store that my head is spinning.  (Easily fixed with a little wine and chit-chat with my regular customers.)  I've decided to figure it all out when I go to the store, set-up and prep.
